Noodle Recipe to Celebrate Chinese New Year

Ingredients: – 200g egg noodles or lo mein noodle – 2 tablespoons sesame oil – 2 cloves garlic, minced – 1 small carrot, julienned – 1/2 bell pepper, thinly sliced

– 1/2 cup shiitake mushrooms, sliced (or any mushrooms of your choice) – 1/4 cup snow pea – 1/4 cup green onions, chopped – 2 tablespoons soy sauce (low-sodium) – 1 tablespoon oyster sauce (optional)

– 1 teaspoon sugar – 1 tablespoon rice vinegar – 1/2 teaspoon ground black pepper – Sesame seeds (for garnish) – Fresh cilantro (for garnish)

Cook the Noodles Boil the noodles according to package instructions. Once cooked, drain and set aside.

Prepare the Stir-Fry Sauce In a small bowl, whisk together soy sauce, oyster sauce (if using), sugar, rice vinegar, and black pepper. Set aside.

Stir-Fry Vegetables Heat sesame oil in a large pan or wok over medium-high heat. Add the minced garlic and stir-fry for about 30 seconds until fragrant. Add the carrots, bell pepper, mushrooms, and snow peas. Stir-fry for 3-4 minutes until vegetables are tender but still crisp.

Combine Noodles and Sauce Add the cooked noodles to the pan with the vegetables. Pour the prepared stir-fry sauce over the noodles and toss everything together until well coated and heated through.

Garnish and Serve Remove from heat and sprinkle with sesame seeds and chopped green onions. Garnish with fresh cilantro.
